Jorge Zamalloa is one of the top Peruvian chefs and a benchmark in the culinary world. His career began in Italy and spans more than thirty years. It took off when he decided to change plastic arts for the art of cooking. Over the past three decades, he has opened the kitchen of four five-star hotels and launched a further five restaurants. Today, he’s in charge of running Plural Restaurant & Lounge and Ambra Rooftop Bar, where he created from scratch the menu of the Hotel Pullman Lima Miraflores, a selection of dishes based on contemporary Peruvian cuisine.
